Overview:
The Steward is responsible for maintaining kitchen work areas and food & beverage equipment and utensils in clean and orderly condition. The Steward is a vital support to the cafe, in ensuring the supplies and tools are ready and available to serve the guests.
Responsibilities:
- Scrape food from dirty dishes and wash them by hand or place them in racks or on conveyor to dishwashing machine.

Wash pots, pans, and trays.

Sweep and mop kitchen floors.
-
Wash worktables, walls, refrigerators, and meat blocks.
-
Segregate and remove trash and garbage and place it in designated containers.
-
Steam clean or hose out garbage cans.
-
Transfer supplies and equipment between storage and work areas.
-
Load or unload trucks picking up or delivering supplies and food.
-
Assist chefs with dish-up meals as needed
-
Polish any silver or plate ware as needed.
-
Maintain established cleaning schedule of kitchen and storage areas so that they are presentable at all times.

Ensure all dirty linens are retrieved; sort linens for washing.

Remove all trash from the kitchen and place in dumpsters.

Participate in ‘deep clean’ and ‘preventive maintenance’ programs.
-
Maintain presence during peak traffic periods.
-
Communicate with other employees to ensure that Guest and employee requests and issues are addressed as needed.

Maintain proper control of keys and electronic key cards.
-
Report any hazards, damage, or needed repairs.

Monitor and control product, supply and labor costs using established methods to meet goals.
OTHER FUNCTIONS

Maintain effective communication with all staff provide recognition to others.

Participate in meetings with staff to learn about incentive programs, new products and procedures, special events, etc.

Ensure a healthy and safe work environment for co-workers and Guests.

Resolve Guest complaints using Cafe procedures.

MINIMUM

High school degree preferred and/or previous work experience in service for at least 1 year.
