Executive Chef Job Description
Job Title: Sous Chef

The Riverton Country Clubis a private club with fine dining facilities, multiple banquet outlets & a poolside café. We are committed to delivering an exceptional dining experience to our members. We are looking for a culinarian who can assist our Executive Chef in being the dining destination of choice for our members and guests.
The Executive Sous Chef also motivates, trains, develops, and directs the back-of-house associates preparing and cooking foods to accomplish the objectives of the operation to the satisfaction of the customers, clients, and management.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
Includes the following. Other duties may be assigned.
- To effectively supervise and delegate food preparation duties pertinent to all Dining Outlets and Banquets.
- Estimates food consumption and purchases or requisitions food, related products and kitchen supplies, determining best purveyors based on cost, quality and service.
- Manages inventory and adheres to weekly food spend
- Schedule and supervise the preparation of all food prior to service periods to ensure punctual delivery and properly prepared foods.
- Participates in the preparation and service of all food.
- Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes and recency of menus.
- Works with Executive Chef to makes changes to all menus on a regular basis.
- Reviews menus, analyzes recipes, determines food, labor and overhead costs, and assigns menu prices.
- Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
- Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
- Familiarizes newly hired chefs and cooks with practices of kitchen and oversees training of cooks apprentices.
- Motivate and encourage staff members to always be at their personal best.
- Observe and enforce Riverton Country Club policies, standards and procedures.
- Establishes and enforces nutrition and sanitation standards for kitchen.
- Works closely with management to handle member’s requests and grievances.
- Work to build strong relationships with peer leaders, particularly with the Front of House Team.
SUPERVISORY RESPONSIBILITIES:
Directly supervises the kitchen staff. Responsible for the overall direction, coordination and evaluation of this unit.
Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring and training employees, planning, assigning and directing work, appraising performance, rewarding and disciplining employees, addressing complaints and resolving problems.
EDUCATION and/or EXPERIENCE:
Associate’s degree in Culinary Arts is required.
Bachelor’s Degree from a four year College or University in Hotel/Restaurant Management and/or Culinary Arts, or equivalent combination of education and experience. A minimum of 2 years experience as a Sous Chef
