General Manager
- Reports to Upper Management
- Perform and excel at all tasks associated with Assistant General Manager position
- Fulfill all tasks related to Assistant General Manager/Shift Leader2 if/when position is vacant
Operational Tasks
- Assist with service to confirm that tables are being touched, food is going out correctly, and that the dining room is being kept clean so that standards do not slip. Assist with service when necessary
- Establish bi-weekly meetings with individual Shift Leader’s and develop guideline for items to be discussed
- Motivate all Shift Leaders to work as a team to ensure that food and service meet appropriate standards
- Embody and enforce company culture and policies regarding quality, cleanliness, and respectful and hospitable communication at all times
- Monitor and facilitate team member recognition
- Evaluate and identify team members for future promotion
- Apply analytical skills to solve a breadth of problems that may arise during a typical work day
- Assist in developing and executing restaurant business plan by surveying restaurant demand; conferring with others in the community; identifying and evaluating competitors; preparing financial, marketing, and sales projections, analyses, and estimates
- Prepare strategic and annual forecasts and budgets; analyze variances; initiate corrective action; establish and monitor financial controls
- Attract patrons by developing and implementing marketing, advertising, public and community relations programs; evaluating program results; identifying and tracking changing demands along with Upper Management support
- Develop and implement strategies to increase average meal checks
- Control purchases and inventory by meeting with Upper Management; negotiating prices and contracts; developing preferred supplier lists; reviewing and evaluating usage reports; analyzing variances; taking corrective actions
- Possess in-depth knowledge of food/paper, alcohol, and labor costs and know how to analyze and ensure objectives are met by staff
- Ensure purchasing and waste information is inputted into Toast and Xtrachef on a weekly basis
- Understand and enact waste minimization policies through proper team member training and product usage
- Ensure proper organization and inventory practices are upheld
- Analyze causes of variance between theoretical and actual food cost and enact measures for minimization
- Calculate restaurant performance data on a weekly basis, being prepared to present at management meetings
- Create budgets for each departments based on sales projections and monitor budgets throughout each week to account for actual vs. theoretical sales
- Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, repair, utility and labor costs
- Ensure that all financial (invoices, reporting) and personnel/payroll related administrative duties are completed accurately, on time and in accordance with company policies and procedures
- Manage proper organization and communication of departmental expenses to Accounting
- Audit security procedures and equipment in place to protect team members, guests, and company assets, providing feedback and improvements as needed
- Possess in-depth knowledge of food/paper, alcohol, and labor costs and know how to analyze and ensure objectives are met by all staff
- Utilize Xtrachef budgeting platform throughout the week to analyze and control food and beverage costs
- Maintain operations by preparing policies and standard operating procedures; implementing production, productivity, quality, and patron-service standards; determining and implementing system improvements
- Have complete knowledge of all local health, alcohol, and OSHA standards and ensure restaurant is in compliance at all times
- Audit and ensure cleaning and maintenance schedule for restaurant equipment is being followed to ensure consistent operation and longevity of all purchased restaurant equipment
- Ensure bar is in complete compliance with all local, state, and federal regulations
- Ensure kitchen is in complete compliance with all local, state, and federal regulations
- Accomplish company goals by accepting ownership of new and different requests; exploring opportunities to add value to current position
- Audit security procedures in place to protect team members, guests, and company assets, providing feedback and improvements as needed
Human Resources Related Tasks
- Accomplish restaurant human resource objectives by selecting, orienting, training, assigning, scheduling, coaching, managing shifts, counseling, and disciplining staff; communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions; enforcing policies and procedures; relaying recruiting needs, personnel issues, and new team members to Human Resources as needed in a timely manner
- Coordinate with Human Resources to complete team member evaluations
- Hire and oversee new team members; display a good judge of character to help ensure the right people are hired to maintain an efficient and motivated team
- Resolve conflicts between hourly team member as needed
- Complete necessary disciplinary actions for team members, including verbal warnings, written warnings, and termination when warranted and communicate to Human Resources in a timely manner
- Coordinate purchases and invoices with Accounts Payable to ensure timely payment
- Monitor training processes of all new team members
- Develop and implement professional development activities for staff
Misc. Tasks
- Monitor and review social media and related sites (google review, yelp, facebook, etc), documenting issues, and escalating to upper management as needed, to improve quality and guest experience and satisfaction
- Work with social media team to attract patrons by developing and implementing marketing, advertising, public and community relations programs; evaluating program results; identifying and tracking changing demands
- Keep social media and catering contacts informed of upcoming LTO’s, events and potential catering opportunities
- Maintain professional and technical knowledge by tracking emerging trends in the restaurant industry; attending educational workshops; identifying and evaluating competitors; reviewing professional publications; establishing personal networks; benchmarking state-of-the-art practices; participating in professional societies
Physical Demands
- Lifting and Carrying: Ability to lift and carry heavy boxes of ingredients and kitchen equipment weighing up to 40 pounds unassisted, and occasionally lifts or moves objects weighing over 40 pounds with assistance.
- Working Conditions: Works in noisy, busy restaurant dining rooms with hard surfaces which may experience temperature fluctuations based on capacity and seasons. Works in hot, humid, and noisy kitchens with hard surfaces. Exposed to steam, fumes and odors. Exposed to extreme temperatures when entering walk-in refrigerators or freezer units.
- Standing for Long Periods: Must be able to stand and move throughout the restaurant for the entire shift.
- Bending and Stooping: Frequently required to bend, stoop, and reach to access ingredients, equipment, and lower storage areas.
- Walking and Moving: Constantly moving around the restaurant to greet guests, take orders, deliver food, and attend to guest needs.
- Repetitive Motions: Perform repetitive motions such as prepping, cooking, cleaning, and fulfilling food orders.
- Carrying and Balancing: Ability to carry trays of food and drinks, balancing them while navigating through crowded dining areas.
- Fine Motor Skills: Precise coordination and dexterity to handle small items such as utensils, condiments, and payment devices.
- Communication Skills: Clear verbal communication with guests and colleagues to take orders, answer questions, and address concerns.
- Handling Grease and Cleaning Chemicals: Safely handle grease, cleaning chemicals, and detergents according to safety guidelines.
- Coordination and Dexterity: Precise coordination and dexterity to handle kitchen utensils, operate cooking equipment, and assemble food orders.
- Fast-Paced Environment: Ability to work efficiently in a fast-paced kitchen environment, keeping up with demand during peak hours.
