The Iron Horse is seeking an Executive Chef. The candidate should have an extensive kitchen management background in scratch kitchens, ideally in an independent restaurant. The chef will work closely with The Iron Horse consulting team to create and maintain a small, well executed menu. The candidate should be able to train and mentor all experience levels and handle a wide variety of administrative tasks.
The Chef is wholly responsible for the day to day operations of the Iron Horse Kitchen. This includes staffing, budget, administration, quality control, and nightly service.
- Oversight on All Food Budgeting, Cost of Goods, and Pricing Evolution.
- Hiring and Training Management of All BOH Staff Including Cooks, Dishwashers, Food Runners, and Porters.
- Maintain Ordering Spreadsheets
- Maintain all Purveyor Accounts and Ordering of BOH Products
- Create and Maintain Opening and Closing Checklists for all BOH Staff
- Maintain the Order, Wellness, and and Cleanliness of the Kitchen
- Organize and Run Daily / Weekly Staff Meetings in Coordination with the GM
- Maintain all Regulatory and Permitting Documentation i.e., Food Handling Certs, Health Department Checklists, etc.,
- Manage the Artist Hospitality Menu Program
- Work Closely with the GM to Manage Dining Room Flow and Timing
- Labor Cost Control and Management
- Work Closely with Consultant on Menu Development, Evolution, and Consistency
- Recipe Documentation
- Work Closely with Local Farms and Cultivate Relationships to Maintain a Menu That is Always Noting Seasonal Changes
- Maintain Weekly / Monthly Inventory Counts
