The Old Koke Plant in Brookhaven, Mississippi, is seeking a well-trained, experienced Kitchen Manager. As such, you will be in an exciting and challenging position with the most dynamic, inviting food service program in southwest Mississippi. The Kitchen Manager will have the responsibility of managing and supervising all aspects of the food service program, ensuring that all kitchen and serving operations run smoothly, efficiently and safely. You will be expected to provide leadership to a highly diverse staff of cooks, servers, food preparation porters and utility workers to ensure quality food is provided in a timely fashion to the satisfaction of all our customers, and in a sanitary and safe environment. Duties and responsibilities will include the following.
- Ensure all food items and products are stored, prepared and served based on established recipes and portion standards, and in accordance with SafeServ degrees of tolerance.
- Maintain accurate inventory of all items, materials, ingredients, kitchenware and miscellaneous products necessary to support posted daily menus and food service operations; and make orders as necessary to maintain an adequate level of inventory of each.
- Ensure the serving line is functioning efficiently and in a sanitary fashion, and that all food selections are up to standard in appearance and in quality. Ensure food containers are swapped out as necessary and in a fashion that is not disruptive of the service to the customers.
- Interview and hire all personnel employed in any aspect of the food service program. Train employees to ensure safe operation of kitchen equipment and utensils, the proper handling of heavy or hazardous items and materials, and adherence to all sanitary and cleanliness guidelines and regulations. Ensure all employees follow cleaning and preventive maintenance measures and standards as prescribed by store policy and procedures.
- Evaluate employee performance, counsel/coach and discipline as necessary, and when merited, terminate employment of personnel who fail to meet required expectations. Ensure employees who perform at the top level are duly recognized and rewarded.
- Plan and organize menus as required, and ensure menus for blue-plate lunches are followed accurately as posted.
- Report directly to the Store Manager, ensuring the SM is kept abreast of any issues concerning food service operations. Assist SM in maintaining smooth, safe and sanitary customer service.
Candidates for Kitchen Manager should possess the following skills and abilities:
- Excellent communication skills, with strong organizational experience
- Capable of cooking if required, with a knowledge of a wide range of recipes
- Ability to plan menus, and place orders for all materials and products accordingly
- Strong conflict management skills, capable of setting and enforcing performance standards
- Proven ability to excel in a fast-paced environment, and a willingness to work whatever hours necessary to ensure mission success.
