SUMMARY
The Assistant Kitchen Manager (AKM) is a leader in the kitchen, reporting to the Kitchen Manager. The AKM is expected to support the Kitchen Manager in administrative duties, planning and daily execution, controlling the line and maintaining kitchen order. The AKM is to act as liaison between the Kitchen Manager or General Manager and kitchen staff. In the absence of the Kitchen Manager, the AKM would be acting Manager on Duty. As such this role requires a high level of personal and professional integrity, leadership and interpersonal skills, and the ability to maintain a calm presence during high volume and stressful situations.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Training and Team Support:
- Skilled in working and training all kitchen positions.
- Foster a cooperative and collaborative work environment between BOH and FOH staff.
Administrative Duties:
- Handle ordering and inventory management to ensure optimal stock levels.
- Engage in employee development and training.
- Perform data entry for invoices and inventory records.
- Oversee order check-in and proper stocking procedures.
- Contribute to menu development with innovative ideas.
Line Control:
- Maintain high standards of food quality and cleanliness.
- Ensure efficient ticket times across all stations.
- Delegate tasks effectively during service.
- Keep the line fully stocked and organized.
- Ensure consistent delivery of high-quality food.
Kitchen Order and Organization:
- Enforce kitchen rules and maintain discipline.
- Delegate tasks, including cleaning projects.
- Keep the team focused and motivated.
- Ensure all prep work is completed accurately and timely, avoiding over or under-preparation.
- Manage staff breaks and send employees home early when necessary.
- Maintain strict sanitation and organization practices, including FIFO (First In, First Out) procedures.
QUALIFICATIONS, REQUIRED SKILLS, EXPERIENCE AND EDUCATION
- 2-3 years of line cook experience in a high-volume kitchen.
- Experience in supervising a kitchen preferred.
- Comfortable with flexible scheduling, including nights, weekends, and occasional holidays.
- Ability to frequently lift or move up to 25 pounds and occasionally lift or move up to 55 pounds.
