Sous Chef
La Grange Country Club
Job Description:
The Sous Chef is a combination of a cook, mentor, manager, assistant, and whatever else is needed. You are passionate about savory and sweets. You must love the local food community as well as watch the world for the next great culinary idea.
Our Food and Beverage areas are sure to impress! This won’t just be a restaurant, or just club events operations. It will be a culinary hub for gatherings and entertaining. Our goal is to create an ambiance where members and guests feel at home and we always have something up our sleeve to impress. This is achieved with a solid grounded team lead by a seasoned hospitality professional.
This position is made for someone who is driven by the need to create memorable cuisine and guest experiences each and every day. This person finds passion being present in the kitchen during service; directly impacting the members and staff experience.
Responsibilities:
Okay…sounds really interesting but exactly what will I be doing?
- Train, train, train! Taste, Taste, Taste! It all starts here. You will be responsible for building a team of talented individuals who never lets the ball drop. This means creating and monitoring a consistent training program that keeps the team on their toes. The initial training program has to prepare our new members for what lies ahead and set them up for success. Then you follow up with daily, weekly and monthly lessons to keep everyone learning and growing. You must love to taste what we are creating daily; you are creating the culture that everyone tastes everything constantly. If you taste it then everyone else must taste it along the way to make sure it’s delicious.
- Motivate! Are you driven by keeping the team reaching for the stars? We are a great club that moves forward…quickly. We never slow down. We always challenge ourselves to do more and be even better.
- Leading the team with the same vision will be the key to your success.
- Communication: You need to rock the airwaves with information. We are a busy club; your voice needs to reach everyone. Distributing hundreds of key information points to everyone that needs to be in the know. Our cooks and stewards expect to be recognized, treated with care and encouraged to make our members happy. To make that happen you will know everything about what our members need and want. Our team in the front of the house needs to know a lot of information each and every shift. You are the voice to give them that information and inspire them to sell all the great things the culinary team has created! It’s not just the food and beverage team you are in contact with, it’s everyone in the club from the General Manger to the grounds team. You have to listen even more than you speak; feedback from our team is vital. We listen, make changes and grow together to be the best team we can be.
- Interaction: This is not an office job! You must love to cook and bake! You must want to be on the line and in the trenches with the kitchen crew. You are ahead of every issue, our vendor shorted us a case of potatoes? Awesome that you sent Ricky to the store to get some for service! That couple at the bar is really into the energy of the kitchen, you make them feel like a rock star with that little treat you brought
over to say hello. Servers, yep those are the real front-line soldiers, you have their back, “what else can I do for you” rolls of your tongue like “hello”. You’re not too proud to rock the dish pit, or mop a floor if needed. You get the job done and love doing it. This is the energy where you live and thrive.
- Leadership: This position has an enormous responsibility of keeping everyone moving in the right direction each and every day. You have to keep the team on track, energized and focused. The team will be impacting the guest experience every minute of the day. Achieving that will take a consistent attitude about standards and service. Many people will count on you for direction and your message will need to be clear and concise.
- Other Responsibilities: Of course, you are a superstar in the kitchen. The team works like one well-oiled machine and everyone loves you. But you have other talents too. This is a business after all. You know financial statements inside and out and adapt daily to meet those needs. You manage duties like schedules, labor controls, inventory and cost controls.
- Attributes for success: You will be leading a large team and constantly interacting with team members, members and their clients. All of that takes hard work and a keen eye. At the heart of it all means your passion for impeccable cuisine and service is matched by some key traits: motivation, time management, multi-tasking, self-starting, quick thinking, dedicated to success, able to handle & execute multiple projects all while being driven, positive and focused.
Position Key Requirements:
- Candidates must have previous kitchen management experience.
- You can cook and bake, like really throw down and cook. You must have a least 1-2 years of savory and/or pastry experience.
- Great team player with the ability to create excellent working relationships across the group. Collaborative approach with all departments, particularly food & beverage and sales & marketing.
- Ability to break down barriers and resolving potential conflicts swiftly and effortlessly
- Strong communication and presentation skills to all team members.
- Creativity and innovation are essential!
- Product knowledge, yeah you have to actually know what you are talking about. If you don’t know it, you research it so you can train the staff properly.
- Ability to think outside the box and approach all issues with a completely fresh approach
- Find solutions before problems arise.
- Ability to anticipate needs and over deliver wherever possible
- Candidates must think on their feet and use their initiative to solve problems and deliver solutions
- Comply with all safety and health department procedures. The kitchens and bars need to be clean, organized and sanitary. Proper temperature procedures are always in place.
- Organization, your mise en place, is en place.
- Actively offers performance appraisals both verbally and written to the team members.
- Meetings, there will be a bunch; you have to be at them and conduct them.
- Able to change direction and work on multiple project aspects at once as needed.
- Enthusiastic, passionate, able to enthuse and motivate others
- Leadership ability and behavior consistent with LGCC Core Values: Fun, innovative, original and personable, and striving to deliver high quality and brilliant customer service
