Purpose:
To set up equipment (as needed) at the start of the shift, to portion and blend materials in accordance with customer specifications and Quality Standards and Company GMP’s, to lead the grinding crew through the process, guiding and assisting when help is needed, and to break down equipment at the end of the shift.
Duties and Responsibilities:
- Lock out all equipment before setup.
- Inspect equipment during set up and report any abnormalities to the Supervisor.
- Follow meat sheet information and the production schedule, as well as product specifications.
- Ensure that raw material is listed on the meat sheet for the production day and production specific production run.
- Ensure that raw materials are used in the correct lotting sequence.
- Responsible for completing all paperwork related to this position. (batch reports)
- Communicate with the forklift driver to bring the necessary raw materials for batching.
- Portion and blend raw materials according to customer specifications & Batch Formulator.
- Collect sample from each batch for fat analysis as needed.
- Lock out all equipment prior to disassembly. All products left in equipment at this time must be removed, labeled, and stored accordingly.
- All leftover raw materials need to be stored accordingly with appropriate labeling.
- All other tasks as assigned by supervisor or manager.
Blender operator: communicate with scale auger operator for transfer of meat to blender. Have knowledge of proper blending procedures for all products.
Working Conditions:
Reports to work at assigned time. Ending time will vary based upon production requirements for the day. Flexibility in work hours and days is crucial. The temperatures range from 30 to 50 degrees in the raw processing rooms. There is exposure to equipment and machinery that is considered to be hazardous. Potential electrical, mechanical, chemical, and heat hazards are also present. The level of noise is high and constant. Floors are damp and slick. Must be able to bend, stoop, pull and lift up to 50 lbs., and to stand for long periods of time.
Frequently stands, lifts, walks, reaches, stoops, bends over, handles product, smells, listens, speaks, and sees to perform the essential job duties.
Knowledge:

- To have an up to date inventory of packing supplies.
- Have knowledge of sanitation procedures.

- Know and understand lockout/tag out procedures.

Education and Work Experience: High school education or equivalent preferred. Good manual dexterity and hand/eye coordination. Ability to communicate and work well with others in a team effort.
