Deluca's Kitchen Manager is responsible for and oversees all aspects associated with BOH operations at Deluca’s Little Rock and reports directly to the General Manager. This includes but is not limited to the following:

Management of the BOH department as a whole

BOH standards, quality, and consistency

Ensures the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations

Kitchen organization, product rotation, and routine maintenance
- Coordinates and directs all food preparation, from prep through service
-
Stays current on restaurant industry trends
- Identifies new culinary techniques and presentations
-
Oversees repairs of kitchen equipment and appliances
- The continued growth of BOH operations based around empirical evidence as a means to make sound decisions
- Oversees BOH staff to ensures they are each performing at their optimum level

Ensures all BOH staff are operating within the parameters set forth by ownership including the following:

Menu and prep consistency, identity, and scope

Maintains standards of food set forth by the General Manger and Ownership

Perceives employee morale and takes strides to ensure a positive working environment is maintained

Strives for open communication flow amongst all managerial, supervisorial, and front-line staff

Encourages staff and remains consistent in demeanor concerning the approach of dealing with one staffer to the next

Maintains positivity in high stress situations and leads by example

Works to ensure there is a consolidated effort with FOH managers, and in relation to the approach in which they deal with staff

United front with other managers in relation to any issues/qualms with staff

Responsible for the BOH aspects related to profit & loss for Deluca’s Little Rock

Attends weekly meetings, and monitors BOH departmental progress

Monitors BOH ordering and ensures optimum pars and inventory levels are maintained
- Oversees scheduling to ensure labor cost remains at a reasonable levelMaintains food quality to ensure standards are met in accordance with Deluca’s recipes and specifications

Constantly and consistently looks for ways to ensure our food quality remains at the highest level

Communicates all issues or perceived issues to the General Manager in order to have a united front concerning corrective measures
- Responsible for ensuring the department as a whole maintains proper staffing levels based on the needs of the business

Oversees all aspects associated with the training of new departmental hires and new hire paperwork

Responsible for gaging new hire progress and determining when training has been completed

Monitors departmental employee performance in a given shift and on a long-term basis

Responsible for ensuring BOH payroll has been audited and submitted on a weekly basis

Imports labor into third party payroll system
- EnsuresBOH is maintaining accurate inventories and recipes
- Ensures all product is accounted for inventory

Performs miscellaneous employee paperwork for BOH staff: welfare, child support, wage verification when necessary

Performs weekly inventory with accuracy
- Other duties as assigned
When Anthony Valinoti visited Hot Springs from Brooklyn, he knew he needed to live there and make Arkansas brick oven pizza using hand-made dough and fresh local ingredients. Deluca's is known for its award winning pizza, eclectic atmosphere, exceptional bar program, and awesome service!
