Deluca's General Manager is responsible for and oversees all aspects associated with the overall operations of the restaurant which includes, but is
not limited to the following:

Direction of each department and the restaurant as a whole

Food & Beverage standards, quality, and consistency

All aspects associated with service and hospitality
- Building organization, cleanliness, and maintenance The continued growth of restaurant operations based around empirical evidence as a means to make sound decisions
- Monitors and make recommendations to the Ownership concerning all subordinate managerial level staff including Assistant General Manager, Executive Chef, and Bar Manager
- Oversees all management and frontline staff to ensure they are each performing at their optimum level

Maintains standards of service and food set forth collectively with Ownership

Perceives employee morale and takes strides to ensure a positive working environment is maintained

Strives for open communication flow amongst all managerial, supervisorial, and front-line staff

Encourages staff and remains consistent in demeanor concerning the approach of dealing with one staffer to the next

Maintains positivity in high stress situations and leads by example

Works to ensure there is a consolidated effort with managers, chefs, and supervisors in relation to the approach in which they deal with staff
- Responsible for all aspects related to profit and loss for Deluca’s Little Rock

Attends weekly meetings, and monitors each departments progress
-
Attends monthly profit & loss meetings to ensure profitability is maintained

Approves the ordering performed by each department head and ensures optimum pars and inventory levels are maintained

Oversees scheduling to ensure labor cost remains at an optimal level

Facilitates interviews for potential new hires and communicates hiring recommendations to the managing partner

Oversees the delegation associated with the training of new departmental hires and new hire paperwork
-
Responsible for gaging new hire progress and determining when training has been completed
-
Monitors departmental employee performance in a given shift and on a long-term basis
-
Ensures all food & beverage products served are of the highest quality
-
Has the ability to overrule any other subordinate manager, chef, supervisor if quality of product to be served isn’t perceived by you as consistent with Deluca’s standards

Constantly and consistently looks for ways to better the quality of product served
- Communicates all issues or perceived issues to the managing partner
- Performs a walkthrough before each shift to ensure the building is ready for service
- Facilitates pre-shift meeting

Final walkthrough of building to ensure that we are 100% set up for success

Ensures that all departments are operating at their optimal levels and takes appropriate actions if one or more are not

Makes strides to diagnose potential issues before they become problem
-
Monitors staff morale on a given shift and takes appropriate action if issues may arise
- Performs any role necessary to ensure we maintain our standards of service on a given shift whether it be FOH, BOH or support staff

Oversees staffing levels on a given shift and cuts staff accordingly based upon business.

Touches all tables in their designated section to ensure guest satisfaction and repeat business
- Responsible for competing end of the night closing procedures including reportin and cash handling

Facilitates all departmental and managerial meetings by presenting agenda items in a thoughtful and organized fashion

Delegates line items to ensure clarity of responsibility to subordinate staff
-
Formulates new ideas and that could potentially better our operations
-
Ensures any policy that is mandated is followed up on and implemented with consistency

Responsible for the delegation of the completion of all new hire paperwork
-
Ensures all new staffers are entered into the POS and payroll systems
-
Reports new hire dates and term dates
- Ensures all new hires are presented with new hire paperwork, sending paperwork with appropriate documentation to payroll
- Oversees the training schedules of all new hires
- Issues testing materials and ensures completion

Responsible for ensuring payroll has been audited and submitted on a weekly basis

Reprints receipts for guests when necessary
-
Performs refunds for guests when necessary
-
Ensures kitchen management is maintaining accurate inventories and recipes
- Ensures all product is accounted for in 365
-
Performs miscellaneous employee paperwork: welfare, child support, wage verification when necessary
- Other job duties as assigned by Ownership
When Anthony Valinoti visited Hot Springs from Brooklyn, he knew he needed to live there and make Arkansas brick oven pizza using hand-made dough and fresh local ingredients. After starting on Park Avenue with six tables, Deluca’s recently moved to a larger downtown Hot Springs space, and has now partnered with the Keets of Petit & Keet and Cypress Social, James Beard Award Winning Chef, John Currence, and Mike Waldo of Waldo's Chicken and Beer, to open a second location at the newly revitalized Breckenridge Village in Little Rock. Deluca's is known for its award winning pizza, eclectic atmosphere, exceptional bar program, and awesome service!
