Position Summary:
The Director of Dining Operations is the person in charge of the overall operation of the dining rooms. Responsible for managing all daily food and beverage services throughout all dining rooms, card rooms, and valet. Works closely with the Director of Clubhouse Operations to ensure Member satisfaction and performs specific tasks as requested by the Director of Clubhouse Operations.
Responsibilities:

Assists in planning, developing, and implementing department budgets, including the operating and payroll budgets.
- Provides direction, including training and development plans, for Dining Room managers and supervisors, Food and Beverage team members, card room services attendants, and Food & Beverage Administrators.

Responsible for day-to-day operations and ensuring end-of-day ops reports are prepared and submitted, timely.
- Responsible for service of all private and Club special events. Meets with Members, as may be necessary from time to time.

Hold Standards of Service Training with all Food & Beverage team members.

Motivates and directs a culture of genuine hospitality through managers, supervisors and line staff to keep the Food and Beverage Department running efficiently and upholding the standards of service.

Responsible for systems and processes that ensure dress attire standards are upheld by both Members and team members, alike, and as established in the approved uniform guidelines and the Member dress code.

Manages the long-range staffing needs of the department.

Works closely with Club partnerships and approved consultants to ensure successful recruitment, retention, morale and performance of the team members who represent the Organization.

Work with HR to schedule and develop necessary employee trainings.

Constantly and continually improves efficiency by eliminating non-value-added processes, embracing technological advances.

Reviews the performance of all related departmental employees on a consistent basis, in accordance with Boca Wood’s rules and regulations, Federal State and County Health and Sanitation laws regarding food storage, preparation, service, and also laws relating to labor, sexual harassment, and liquor.

Monitors Members’ attire, ensuring conformance with the Dress Code.

Ensures all dining room equipment is functioning properly.

Maintains storage areas and other BOH spaces as if they are Member-facing.

Collaborates with the Culinary Team and AGM in menu planning, pricing, food and beverage cost controls, procurement quality control, and dining rooms reservation system.
- Assists F&B Administrator and Communications team in developing flyers with Graphic Art for all events and, makes suggestions for maintaining the F&B section of the Club website.

Ensures Food and Beverage scheduling is entered within payroll software system, weekly.
- If costed schedules are not within budget, develops understanding of variance for review and approval.
- Monitors weekly variances between budget, labor scheduling and actual labor costs, reporting trends; holds team accountable for unreported schedule variances.

Directs corrective actions, as necessary.

Directs maintenance of the POS system to ensure all POS items have correct pricing, menu cost split, and correct mapping to menu categories, and that all hardware/ software is up-to-date and performing at optimum levels.

Responsible for preparing clear and concise reports and maintaining meaningful, appropriate and effective relations with team members and Members, alike.

Ensures employee performance is reviewed on an ongoing basis, and employee performance evaluations are conducted in a timely fashion across all areas of responsibility.
- Manages processes and systems that ensure the maintenance and upkeep of all Clubhouse equipment and general environment. Assists in the planning of facility improvements, remodeling/ repair and interacts with appropriate Club committees for this purpose.
- Ensures systems of accountability for inventory in all areas of responsibility – including the regular update of order guides, storage standards, carrying pars, transfers, etc.

Produces monthly variance analysis and reporting for Food and Beverage operations to budget, forecasting future months on a quarterly basis.

Ensures that cover and revenue for all F&B outlets and Banquet events are reported on the POS system daily.

Supports the Catering Manager in all Event food and beverage cost reporting.

Responsible for maintaining, monitoring and controlling beverage inventories.

Responsible for the renewal and replacement of glassware, silverware and linens.

Responsible for the preparation of the annual food and beverage departmental budget and monitoring compliance.

Inspects food and beverage dining areas daily for cleanliness and repair.

Oversees planning and supervising parties and banquets. Assists in planning menus and prices according to guidelines for private parties.

Ensures proper billing of charges to the Members’ accounts.

Approves all independent contractor invoices.

Prioritizes Member presence at 80% and limits relative administrative tasks to 20%
Requirements:

Computer skills with proficiency in Microsoft Office, emphasis on Excel and Word

Knowledge of NorthStar preferred but not required

Organization skills and attention to detail

Exposure and experience with high end clients is preferred
- Advanced leadership of multi-unit or high volume, high-end operations. Prefer Hotel and/or Club experience.

College Degree in Hotel, Restaurant, and Institutional Management preferred.
- College degree in another field applicable to Club Management acceptable.
- Four-to-six years Management experience is required.
