Bolongo Bay Beach Resort, located on the island of St. Thomas in the US Virgin Islands, is seeking a Sous Chef. The individual in this position will assist the chef in the daily operation of the kitchen:
- Responsible for daily supervision of kitchen operations, maintenance of quality standards, and sanitation and cleanliness.
- Responsible for food preparation, plate presentation, portion and cost control.
- Ensure all equipment is kept clean and in excellent working condition.
- Work with Chef to plan and price specials.
- Ensure all products are requisitioned and received following policies and procedures.
- Oversee production of employee meals and food for day sails.
- Order and prep food according to schedule.
- Cook orders as per ticket from server. Handle any special requests of the guests.
- Other duties as assigned by Chef or F & B Director.
Required Skills
- Minimum 5 years experience in varied kitchen positions.
- Must be able to communicate clearly with managers, kitchen and dining room personnel, and guests.
- Must be able to stand for long periods of time.
- Ability to lift up to 50lbs.
- Culinary school graduates preferred.
- Flexibility to include nights, weekends, holidays, and the ability to work overtime if available.
